I'm sure this was very interesting to attend. Celiac has always presented in my skin, it's actually how I was eventually diagnosed over 20 years ago! And the point you made with fiber is so important. The heavily processed GF foods are often lacking in most nutrients, but definitely lacking in fiber!
Thank you for sharing! I dealt with a skin condition related to eczema, keratosis pilaris, for many years before being diagnosed, and never connected it to celiac disease until this event. Sure enough, it's mostly subsided since going gluten-free (whereas the many skincare products I tried over the years never helped!) so it totally makes sense to me now. And yes, the GF packaged foods really have such minimal nutrients in them!

Yes, some gluten free products are basically food-free as well. So ultra processed that it isn’t surprising they don’t have fibre!
I get rashes from gluten. And they don’t just vanish when I clean up my diet either, it takes a while.
It is really maddening how little nutrition some of these gluten-free packaged breads/foods have!
This is a really great overview! I really think I need to try the low fodmap diet for a couple of weeks to try to reset my gut health!
