Great info. I am not sure why anyone would think that fermentation process of sourdough would get rid of all gluten when the smallest amount can cause issues for celiacs.

Thank you so much for mentioning my GF starter guide! This is a great write up about the dangers of misinformation in the world of celiac. It is amazing the ignorance behind some "health" advice. I have been told more times than I can count that wheat based sourdough is "safe" for celiacs. Mind blowing.

Of course - I love what you are doing with your newsletter! It's really so frustrating (and dangerous!) when people who aren't qualified to speak about celiac disease offer health advice. I'm glad there are plenty of gluten-free recipes out there, like the ones you are creating, that celiacs can safely enjoy!

I think a great point made here is that EVEN IF we feel no damage after eating something, doesn’t mean no damage was done inside of us. That’s why tiny amounts of gluten added to things like dips and other seemingly non-bread items are so disappointing.

There is slow going on when ALL people eat ultra-processed food only instead of real food. There is damage- such as diabetes- if you eat enough junk. But it takes place slowly and you sure don’t feel it with each bite.

Thanks for reading and sharing your thoughts! Exactly, just because you feel okay after eating something doesn't necessarily mean it's not affecting you internally. For celiacs specifically, I know it can be difficult to wrap your head around the potential long-term consequences if eating gluten doesn't make you feel sick in the moment!
