Really great tips and I especially liked the advice regarding weighing out the ingredients when baking - it is certainly true that substituting for the same weight of ordinary flour just does not work. I learned the hard way!

Thank you! Yes, Rachel's tip to weigh out ingredients is a game-changer. I also had the same issue in the past where I tried to just substitute gluten-free flour.

This is an excellent post. I use gluten free flours everyday for making breakfast foods for my kids (pancakes, waffles, etc) and I’m always on the prowl for new gf flours.
